Winemaking and Ageing:

light maceration of grapes at low temperature, soft pressing; controlled temperature fermentation; no added sulphites. The Pinot Grigio grape has a natural coppery colour, so a light maceration produced the characteristic pale pink colour

Wine and pairings:

the floral notes of Pinot Grigio include hawthorn, broom, acacia and pear. With ageing, mineral notes develop, as well as hay notes. Dry flavour, pleasantly citrine, slightly bitter with a full structure. Suitable for pairings with risottos, shellfish and white meats.
