Winemaking and Ageing:
light maceration of grapes at low temperature, soft pressing using pneumatic press; controlled temperature fermentation. Fermentation yeasts left until spring, with repeated “batonnage”
Wine and pairings:
intense straw colour, notes of white peach, with a delicate scent of almonds, pear and thyme. Decisive and saline on the palate, dry and lingering flavour. Excellent between meals, it is a classic aperitif wine. Goes well with San Daniele ham and local salami, but also accompanies fish dishes, fresh and mature cheeses and traditional Friulian “Frico”, a dish made with potatoes and cheese.
